Artichoke Salad

“Hey mom, you’re sure into making salads these days,” my teenage son said, eyeing me hungrily. Or maybe I just thought he was hungry. Aren’t teenage boys always hungry?

So I came up with this version of artichoke salad. It’s fairly straightforward and won’t take long to make. You can use it to complement summer get-togethers with friends. Or make up a big batch to keep teenagers satisfied.

If you’ve never used artichokes before and find the raw plant a bit intimidating (as well as prickly, ouch!) you can use the marinated artichokes that you find in a jar in the supermarket.

Artichoke Salad

1 jar of marinated artichoke

(or 1 artichoke cut up, outside leaves and stems removed)

1 red bell pepper, chopped

1 orange bell pepper, chopped

1 yellow bell pepper, chopped

1/2 a Walla Walla sweet onion, chopped

Dressing

5 Tbsp. olive oil

1-2 Tbsp. red wine vinegar

1 tsp. sweet marjoram, dried

1 tsp. oregano, dried, 

1 tsp. rosemary, dried and crumbled 

1/2 tsp. dried mustard

Shake up dressing and pour over chopped vegetables. Enjoy!
