Down by the River
By Marilyn Zink
It’s been so hot!
Hot enough to fry an egg on the sidewalk. Or at least hot enough to sun dry tomatoes.
We were done by the river yesterday and mostly in it, so we weren’t frying much of anything.
It is an awesome place to swim on a hot day and so refreshing. Quite a few people had discovered this little spot - which has some shallow pools for children to play in, deeper pools for the adults and a current that makes the water always clean and fresh.
After a good long time in the river, swimming and splashing about, we came out to dry off.
Then we (that’s our family and friends) headed back to our house for a barbecue along with some corn (also barbecued), a Greek pasta salad I had made earlier and some Persian rice.
I made the rice from a spice mix I had picked up at a local farmer’s market and it has an interesting flavour. I like to have various spice mixes on hand that I can add to rice, pasta, a soup, sauce or anything else that works.
It’s a good way to be able to eat healthy and cut down on all the saturated fat and sugar that is often a part of the North American diet.
