Last of Summer Plum Popsicles

Plums are one of those fruits that are still available near the end of summer.

You might have red plums, purple plums or yellow plums. We had them in the fridge and I hadn’t decided what to do with them, other than a vague thought of making upside down cake.

The following is a recipe I whipped up (literally and figuratively) when my daughter suggested making popsicles. Since I had just purchased coconut oil (for which I intended to make dairy-free chocolate, you know, like a healthy version), I decided to add that.

Plum Popsicles

2-3 cups plums, any size

2-3 Tbsp. coconut oil

1 banana

1 tsp. vanilla

1/4 cup honey or maple syrup

Take the plums and puree lightly in blender. Press through a sieve to remove pits and skin. Melt the coconut oil.

Put the plums, coconut oil, banana, honey or syrup in a blender and puree. Add vanilla and cinnamon if desired. Pour into popsicle containers and freeze, about 4-6 hours or overnight to set.

If you don’t want to make popsicles, you can try making a healthie smoothie instead. Just add 2 cups of soymilk, rice milk or almond milk.
