Enjoying the Best Caesar Salad

“Salad is not for the faint of heart.”
Our server made that pronouncement while making the best traditional made-from-scratch Caesar salad I have ever tasted. It was at the Masthead Restaurant in the funky little fishing village of Cowichan Bay on Vancouver Island.
‘I like her already,” I thought to myself, while watching her mix the garlic cloves, anchovies and other ingredients to make the dressing. She used a huge wooden bowl and she smashed the garlic cloves, squeezed fresh lemon juice and whisked everything up nice and fresh. Not a blender in sight.
Then she divided the romaine lettuce neatly between the plates, added the dressing (with fresh Parmesan for my husband) and fresh cracked pepper. My husband and I both agreed the salad was the best we had tasted. While the garlic was strong, it wasn’t overwhelming.
It was an awesome start to celebrating our anniversary dinner. I like having food made as fresh and natural as possible, utilizing herbs whenever possible to enhance the flavour. It makes us healthier and helps our bodies fight off illness better.
