A Healthy Salad Dressing

What does it take to eat healthy and prevent diseases like cancer?
Having a good supply of healthy recipes can go a long way.
Lorene Benoit, author of The Paw Paw Program, A ‘Christopher Columbus’ Approach to Cancer, has several healthy recipes in her book.
As part of an interview where she shared her secrets on how herbs can be used in the fight against cancer, Benoit graciously allowed us to use one of the recipes from her book, the excerpt is below. Note: Alain is Lorene’s husband of many years.

Alain’s Green  Goddess Dressing
1 cup cold-pressed olive oil
1 Tbsp. lemon juice and/or 1 tbsp. apple cider vinegar (pure, unpasteurized).

This is the basic recipe so play with it! What makes the dressing delicious and nutritious is the addition of as many herbs, weeds and other ingredients that your imagination and taste buds allow. This is what makes it the Green Goddess Dressing.
* Garlic cloves – (1 – up to your tolerance)
* Onions – 2 Tbsp. to 1/2 cup
* 1/8 tsp. mustard powder
* Chives, oregano, marjoram, parsley, sage, rosemary or thyme (like the song)
(Lorene sometimes adds a few fresh leaves or 1/2 tsp. dried of any of the following – lemon balm, mint, spearmint, catnip for accent flavour).
*Weeds such as chickweed, nettles, dandelion greens all add vitamins, minerals and different flavours.
* Fresh greens such as kale, beet tops, spinach.
For extra nutrition add miso, engevita yeast, Bragg’s aminos to taste.

Preparation:
Blend at high speed until all ingredients are well liquified.
Other options, dependent upon your food prefernces, blood type and condition.

For creamier/ranch:
3 tbsp. healthy mayonnaise (optional)
2 tbsp. organic sour cream or yogurt (optional)

For ‘Thousand Island,” – blend in fresh tomatoes.

For Caesar: add a raw egg (coddled firs in hot water 1 minute), mustard, lots of garlic, and optional capers, anchovies, Worcestershire, parmesan cheese.

For additonal Essential Fatty Acids, you can add coconut oil, hemp oil, omegas – just check the flavour. Use freely on salad, vegetables, meat, fish, poultry, eggs. At least two tablespoons per day will help your intake of healthy oils.

Whether you chop ingredients or not before blending will depend on the capability of your blender. We use VitaMix, and just throw everything in whole.
